Tasty Tuesday: Strawberry Almond Puffs

Hooray for the return of Tasty Tuesday!

During my blogging absence, I've been making up my hours in the kitchen and have got quite a few new recipes to share with you for the next few weeks.



Ingredients:

- Pastry Puff Dough
- Cool whip
- 1tsp. Almond Extract
- 1/4 cup Sliced almonds
- Strawberries
- Cocoa Powder


Directions:

1. Preheat oven to 400°.

2. Cut pastry puff dough into squares and press gently into cupcake tins.

3. Bake at 400° until pastry is golden brown. Set aside to cool.

4. While the pastry is cooling, mix cool whip, sliced almonds, and almond extract in a mixing bowl.

5. Spoon cool whip mixture onto pastries and top with strawberries (or raspberries, blueberries, etc.).

6. Dust pastries with cocoa powder and enjoy!


This recipe is actually a variation of Giada's Raspberry Almond Tart. Instead of one large rectangular pastry, I created individual shells for convenience. Also, instead of whipping the cream myself I just used cool whip and substituted the amaretto liqueur for almond extract and the raspberries for strawberries.

These puffs are a great compliment to a heavy dinner and are quick and easy to make for any occasion.
